Domino Potatoes

Patatas Dominó

Roasted potatoes are an excellent source of carbohydrates, and if you only use a bit of oil they are not at all fattening. One good way to savour them is Domino Potatoes, in which the potatoes are cut to look like the tiles in this game.

The best potato for this recipe is the Marabel variety,, which is perfect for roasting, and the Monalisa variety,, because of its versatility.

Ingredients for 4 people:

  • 6-8 large Monalisa or Marabel potatoes
  • 4 tablespoons of olive oil
  • Parsley
  • Salt

Time required: 1 hour.


Wash and peel the potatoes, then cut off the ends to make them rectangular. Cut into thin slices around 4-5 mm thick. You can set aside the leftover pieces to cook and add to salads.

Soak the cut potatoes in cold water for half an hour as the oven preheats to around 190 degrees C. Rinse the potatoes and then mix them in an oiled bowl with the olive oil, salt and parsley. Then place them in overlapping each other like fallen dominoes. Bake for half an hour or until golden brown.
